What Claire Ate: June 1st, 2015

The first day of June was gloomy and drizzly, just how I like it.

I walked through the mist to get a coffee, forgoing my usual iced coffee for a con panna (two shots of espresso with whipped cream).

Fueled by my solid breakfast, I went home and started baking for this weeks Recipe of the Week.

For lunch, I had toast with goat cheese, blueberries, and almonds.

I also had some of this delicious bread with a glass of milk.

Around 5:30 we sauntered over to Yoga, which completely kicked my ass. (In a good way! I was able to do Wild Thing and Dolphin pose for the first time ever!)

Pre-shower dinner was the last bit of charcuterie leftovers from Sunday.

I only ate like, six of those olives.

 

And the last bit of almonds.

Post-shower dinner was a couple of bowl of sauteed zucchini, carrots, and purple rice.

  1. That coffee looks divine. Seriously. I could live on coffee and I should totally branch out to other kinds of coffee drinks beyond my mistos. Whipped cream has protein in it and good fats, so it’s a TOTALLY HEALTHY BREAKFAST. Right? I’m telling myself, yes.
